」三角餾「其實是著名的海南風味小吃。這種以糯米粉、椰絲、薑汁、花生、紅白糖製作而成的甜點(聽說有鹹的),因為是呈三角形關係,故得名「三角餾」 。三角餾的名字源於三角的形狀,這三個角,在民間有著代表福、祿、壽的說法。但這個食譜是用沙葛作為餡料。
Traditional kueh in Hainanese we call it 『三角餾』 San Jiao Liu that represents good fortune, prosperity and longevity.
Characteristics: Skin: Made with sweet potatoes to maintain the chewiness and soft texture even after hours.
Filling: Sweet with a hint of saltiness. Can use shredded coconut paired with pandan, gula melaka, ginger, orange peel, peanuts and toasted sesame seeds. Here we used Bang Kuang as filling.
Ingredients 食材: ▶️ Skin dough 皮料 Potatoes 馬鈴薯 100g Sugar 糖 1 tbsp Glutinous Rice Flour 糯米粉 200g Water 清水 100ml Corn Oil 玉米油 40g Purple Sweet Potato Powder 紫薯粉 1 tbsp
▶️ Bang Kuang Filling 沙葛餡料 - cooking oil 食油 50ml - garlic 蒜米 - minced meat 肉碎 80g - salt 鹽 1/2 tsp - Bang Kuang (Yam Bean) 沙葛/豆薯 400g
