Using the same pastry ingredients from Taiwanese 3Q mooncake, we made winter melon paste and combine with chicken floss, wrapped in a flaky outer crust with sesame seeds. A unique scrumptious and savoury traditional pastry.
用相同的台灣3Q月餅材料,我們用冬瓜製作冬蓉餡料之後和雞絲一起包裹在有芝麻的片狀殼中。是個非常獨特美味可口傳統酥餅。
▶️ Winter melon paste 冬蓉餡料 Winter melon shreds 冬瓜絲 500g (去水的) Sugar 糖 100g Maltose 麥芽糖100g Corn oil 玉米油 30g
(take 8 portions 取八份用 x 40g each)
▶️ Water skin dough (水皮麵糰) Plain flour 普通麵粉 160g Icing sugar 糖粉 1 tsp Water 清水 70ml Salt 鹽 1/4 tsp Butter 牛油 55g

▶️ Shortbread dough (油酥麵糰) Plain flour 普通麵粉 100g Shortening 白油 65g
(for 8 portions 分成八份用)
▶️ Fillings Ingredients (內餡材料) Meat floss 肉絲 1 tbsp x 8 Winter Melon paste 冬蓉餡 (for 8 portions 分成八份用) 40g x 8
▶️ Decoration (裝飾) White sesame seeds 白芝麻 Whole egg liquid 全蛋液 刷面
Preheat oven to 200°C and bake around 30 minutes. 烤箱預熱至 200°C,烘烤約 30 分鐘。
