How to make Chee Cheong Fun 如何製作豬腸粉

Chee Cheong Fun, also known as Chinese rice noodle rolls, is a Cantonese snack, mini lunch, or dim sum that originated in Guangdong Province in southern China and Hong Kong. It's a thin roll packed with shrimp, veggies, or other stuff created from a wide strip of shahe fen.

This time we are making Q-squishy chee cheong fun. Topping with shrimps, fried shallots and chopped green onions, drizzle with sauce is super delicious and rich in taste.

豬腸粉，也被稱為米粉卷，是一種起源於中國南方的廣東省和香港的粵式小吃、迷你午餐或點心。這是一個薄卷，裡面裝滿了蝦、蔬菜或其他由寬條沙河粉製成的美食。

這次我們來自製Q彈滑嫩的豬腸粉。 這樣做，配上蝦仁，炸蔥頭和蔥花，淋上醬汁超級好吃，口感豐富。

♦️Add on ingredients 配料: Shrimps 蝦仁 Green onions 青蔥 Fried shallots 炸紅蔥頭

♦️Flour mixture 粉漿: Rice flour 粘米粉 50g Wheat starch 澄粉 35g Tapioca starch 木薯粉 15g Salt 鹽 1/2 tsp Water 清水 300ml

♦️Sauce 醬汁: Light soy sauce 醬清 1 tbsp Sesame oil 麻油 1/2 tsp Fish sauce 魚露 1 tsp Sugar 糖 1 tsp Oyster sauce 蚝油 1 tsp Hot water 熱水 100ml

📌Methods: 1. Cut the cooked prawns and set aside. Add the shallots in a hot pan and saute until fragrant. Fry until golden brown and set aside. Cut the green onions and set aside. 2. Mix well the sauce ingredients and put it in a hot pot, cover it for later use. 3. Stir and mix the flour mixture evenly and set aside. 4. Spread oil on the steaming pan and evenly pour several spoons of flour mixture on the steaming pan until covering the pan area. Sprinkle with shrimps and chopped green onions. 5. Bring the water in the steamer to a boil, put the steaming pan in the steamer and steam for about 3 minutes. 6. Use a spatula to gently roll along the edges into long strips, sprinkle with fried shallots and drizzle with sauce before serving.

📌做法: 1. 將煮好的蝦仁切好備用，熱鍋熱油下入紅蔥頭爆香，炸至金黃色備用，青蔥切好備用。 2. 醬汁調好放入熱鍋里蓋上備用。 3. 把粉漿攪拌混合均勻，備用。 4. 蒸盤抹上油將幾勺粉漿平均淋在蒸盤裡范蓋蒸盤，撒上蝦仁蔥花。 5. 蒸鍋水燒開把蒸盤放進去蒸三分鐘左右就好了。 6. 用刮板沿著邊緣輕輕捲成長條撒上炸蔥頭再淋上醬汁後即可食用。
